Recipes: Chicken Enchiladas

  • 1 pack of corn tortillas
  • 9oz can of whole corn
  • 4 cooked and shredded chicken breasts
  • homemade chicken enchilada sauce
  • 1 cup of old shredded cheddar and jalapeƱo havarti cheese
  • cilantro
  1. Gather all of your ingredients and set the oven to 350.
  2. Roll 6-8 tortillas stuffed with corn and chicken - lay evenly in a 13x9 pan.
  3. Pour the chicken enchilada sauce over the tortillas.
  4. Smother with both cheeses and bake at 350 (un covered) for about 40 minutes - sprinkle with cilantro when done baking.
  5. Serve with my homemade guacamole - eat it up and enjoy.
