Recipe: Gluten Free Wendy's Spicy Chicken

Ingredients
  • 2 large chicken breasts

  • ¼ of a cup of gluten free flour
  • ¼ of a cup of gluten free flour
  • 1 egg

  • ½ of a cup of rice breadcrumbs
  • ½ of a cup of rice breadcrumbs
  • 1 tablespoon of franks red hot (I used buffalo)

  • 3 teaspoons of red chili powder
  • 3 teaspoons of red chili powder
  • 1 cup of canola oil
  • 1 cup of canola oil
  • 4 gluten free hamburger buns
  • 4 gluten free hamburger buns
  • 4-6 pieces of lettuce
  • 4-6 pieces of lettuce
  • 2 tablespoons of mayo
Instructions
  1. First, gather all of your ingredients.
  2. Lay out 3 bowls. In one, the flour and ½ the red chili powder. The next bowl, the raw egg whisked with the franks. Lastly, the third bowl gets the rice breadcrumbs and the rest of the chili powder.
  3. In a large pan, pour in the canola oil and start to heat on low.
  4. Cut each chicken breast into 3 or 4 (that's what Wendy's does, right?). Haha...I'm so funny.
  5. Line your bowls up - flour, then egg and lastly rice breadcrumbs.
  6. Take each piece of chicken and lightly cover in flour then dip in the egg. Step three, cover with rice breadcrumbs
  7. Now, 3 pieces at a time - you don't want to crowd the pan - lay in the chicken into the hot oil. Cook for about 3-4 minutes per side, yet turn every minute to prevent burning.
  8. Let them cool on some paper towel for about 1 minute
  9. Get your buns ready (gluten free, of course).
  10. Load with mayo and lettuce. Oh, and eat with steak fries! Done. Time to eat.
