Recipe: Lasagna Rolls

  • package of rice lasagna noodles
  • bunch of spinach
  • 1 tablespoon of garlic
  • 2 tablespoons of olive oil
  • 3 cups of homemade sauce (mine is turkey rose sauce)
  • 350-420g container of ricotta cheese
  • 1½ cup of shredded mozzarella cheese
  1. First - cook your noodles.
  2. Second - sauté the spinach in the garlic and olive oil. Get out your sauce - I made mine the day before, turkey rose good!
  3. Set noodles aside when they are done - they need to cool.
  4. Once the spinach is wilting add it to the ricotta cheese and add salt and pepper to taste.
  5. Lay out your noodles. I always make a couple extra than what I think I'm going to need - this way, I don't get frustrated when some of the noodles break.
  6. Lay down the ricotta and spinach mixture first.
  7. Next - pile on the sauce - leaving a bit to top the rolls off. Gently roll and place seam side down into the baking dish.
  8. Top with about ¼-1/3 cup of the sauce and all the shredded mozzarella.
  9. Bake in the oven, uncovered, at 350 degrees for about 35-45 minutes. Portion out and enjoy!!
