Recipe: Summer Skewers

  • ¼ of a watermelon
  • 300g of goat feta
  • 12-16 mint leaves
  • ½ a cantaloupe
  • 300g of bocconcini
  • 12-16 basil leaves
  • ¼ cup of balsamic vinegar
  • ¼ cup of olive oil
  1. First - you need to cut your watermelon and cantaloupe into 1 inch squares. You can use a baller for the cantaloupe, but I didn't have one.
  2. Then, cut your feta into 1 by 1 inch squares, too.
  3. For the watermelon skewers, stack the feta, mint leave, then the melon on top.
  4. The cantaloupe, start with the melon, basil, then the bocconcini.
  5. Drizzle the feta skewers with balsamic vinegar and the bocconcini skewers with the olive oil. Top the cantaloupe/bocconcini skewers with a bit of salt.
  6. That's it - you're done.
