First, set your oven to 350 on bake.
Next, wash, peel, and slice your potatoes.
Chop the garlic and thyme.
In a separate bowl, melt the butter and add in the cream and garlic.
Shred the cheese.
Layer 1/3 of the potatoes in the dish, then top with 1/3 of the cream mixture and a bit of thyme, salt and pepper.
Add 3/4 cup of cheese. Repeat for the next two layers, but don’t finish the third layer with the cheese – we’ll add that at the end.
Bake in the oven, covered with foil, for about 75 minutes, making sure it doesn’t burn.
Once it’s been baked for about 75 minutes, remove the foil and add on the remaining cheese. Bake for another 15 minutes until the cheese is bubbly.
Done! Well, almost. Let it stand for about 7 minutes until it’s firmed up a bit. Serve and enjoy.
