Cucumber Strawberry Salad
It’s salad time – cucumber strawberry salad. This recipe is inspired by my husband who doesn’t like tomatoes. Creating a bright and colourful salad is a challenge when someone doesn’t like bright red tomatoes. Here, I’m using ultra fresh strawberries. The dressing is homemade, too, so let’s get started!

- 1 cucumber
- about 2 cups of strawberries
- 1/2 a cup of crumbled feta
- Dressing:
- 1/4 cup of white vinegar
- 1/2 a cup of canola oil
- 3 tablespoons of sugar
- 2 tablespoons of white onion
- 1/2 a tablespoon of salt
- 1 tablespoon of poppy seeds
First, gather all of your ingredients.
Slice the cucumbers into little wedges. If I were making this ahead of time, I'd for sure remove the seeds on the cucumber, yet since we're eating it right away, they stay.
Quarter the strawberries - you want them to look nice and full in the salad.
Dressing time. Put all ingredients except for the poppy seeds in the blender. Pulse until well mixed. Then, stir in the poppy seeds. Looks good, eh? On this salad I used about 1/3-1/2 of this recipe. The rest is in the fridge ready to be eaten with snap peas. It'll keep for a couple of weeks.
Time to mix the cucumbers and strawberries in the dressing.
Then, top with crumbled feta.
Done! How good does it look? So bright and colourful.
