First, like usual, gather all of your ingredients. Be sure your peanut butter is cold, other wise it'll run all over the bananas and make quite a mess.
Time to cut your banana, cut it into about 1/2 inch slices.
Then, top with a dab of peanut butter and finish off with another banana slice. It works best if you use two banana slices that are side by side (that way they share one cut) and will sit up nicely.
Then, place them on a baking tray covered in parchment paper. Freeze for 1 hour.
Put the chocolate in a double boiler or in the microwave on melt - don't burn it. You want it nice and melted.
Once the chocolate is ready, grab your frozen banana bites from the freezer. Dip them, carefully, into the chocolate and then lay them back on the parchment paper to set. I put mine back in the freezer for 30 minutes.
Then, I portioned them off - they keep well in the freezer, yet are best for a lunch time snack when they've had a bit of time to defrost in your lunch bag. Eat up and enjoy.
