Warm Salsa and Baked Goat Cheese

Warm salsa and baked goat cheese is the perfect snack for this Sunday’s game. It’s gluten free (just as long as you use GF crackers or chips) and it’s hearty. Oh, and full of flavour, too.

Ingredients

  • a red onion
  • 1 tablespoon of garlic
  • 2 tablespoons of olive oil
  • 3 off the vine tomatoes
  • 1-2 tablespoons of basil
  • 1/2 teaspoons of salt
  • 4-5 oz of goat cheese
  • crackers/chips for dipping

Instructions

  • Okay - first, gather all of your ingredients and set the oven to 350 degrees.
  • Dice the onions and chop the garlic. Add the olive oil to a pan and heat it up a bit. Once it's warm, add the garlic and onions. Once the onions are translucent add the basil. I used dried because it's what I had - feel free to use fresh if you like, yet I'm not much of a fan of fresh cooked basil. It's get s chewy or something. If you go that way, be sure it's chopped very finely.
  • Next, dice the tomatoes and add to the pan. You'll want all the excess tomato liquid in there, so be sure to scrap the cutting board into the pan. Let it cook for about 5-7 minutes on low-medium.
  • Time to bake the warm salsa with the goat cheese. Pour the salsa into an oven safe dish. Top with large chunks of goat cheese. I sprinkled on a bit more basil and then baked it for 13-15 minutes - just until the goat cheese is starting to look melty.
  • Done! Take out and let it rest for about 5 minutes - you don't want to burn you mouth. Eat with your favourite chips or crackers. We ate it with brown rice crackers (gluten free, of course) and it was delicious - so good.
