Cake mix cinnamon rolls that failed - how I wanted these to work. Since becoming a celiac this past summer I've stopped buying boxed cake mix, yet I had one left! Who knew this stuff was good for such a long time? Anyway, it wasn't past its expiration date, so away I went. I searched for a different recipe to make with a box of cake mix - not cookies or cake - and I came across this cinnamon roll recipe from Betty Crocker. It did not work. But, my husband told me to call them cinnamon roll scones and then I could say they worked. He's adorable.

Ingredients

  • 1 box yellow cake mix
  • 2 1/2 cups of flour - all I had was cake mix flour
  • 1 package 2 1/4 teaspoons regular active dry yeast
  • 1 1/4 cups water
  • 1/4 cup butter melted and cooled
  • 1 cup packed brown sugar
  • 2 teaspoon ground cinnamon
  • 1 container of frosting

Instructions

  • First, gather all of your ingredients.
  • Next, mix the cake mix, 1/2 the flour and the yeast together. Then, slowly add the water mixing well. Add in the rest of the flour a bit at a time. Then, let it sit for about 1 hour. I wrapped mine in plastic wrap.
  • Now, roll it all out. This part was brutal. Not only was the dough so sticky, it didn't rise much at all. I rolled it between sheets of plastic wrap and it seemed to work well. Caused less frustration on my part, that's for sure!
  • Once it's rolled out brush with butter and top with the cinnamon and brown sugar. I used twice as much as the regular recipe called for. The initial amount didn't seem like enough at all.
  • Brush your pans with a bit more butter - you don't want them to stick.
  • Set the oven to 350 degrees and let the cinnamon rolls sit for 30 minutes while the oven heats up.
  • Bake for 15 minutes. The temperature and the time is different than the other recipe, but mine worked. 375 was too high, maybe because I made them a bit bigger.
  • Let them cool and then melt the frosting in the microwave for about 35 seconds. Then, lay the rolls on a cooling rack and drizzle with the frosting. I put paper towel under my cooling rack for quick and easy clean up.
