Penne Lasagna Bake

Penne lasagna bake – a slight take on my lazy lasagna from a couple of years ago. This recipe manifested out of my craving for lasagna and my lack of lasagna noodles. This is an easy week night dinner – let’s get started!

Ingredients

  • large box of penne pasta I actually used 2 small boxes
  • bunch of spinach
  • large white onion
  • 2 tablespoons of olive oil
  • 1 jar of your favourite pasta sauce
  • 200 g of mozzarella cheese
  • 3 oz of cream cheese
  • 750 g of cottage cheese

Instructions

  • First up, gather all of your ingredients and get a large pot of water on.
  • Cook your penne as per the directions - use the lower of the time frame.
  • Time for the sauce.
  • Dice the onion and cook in the olive oil. Then, wash and cut the spinach. Add to the onions once they are translucent. Then, add in the jar of pasta sauce. Melt the cream cheese into the sauce.
  • Once your pasta is cooked, strain it.
  • Layer time! Put down a bit of sauce on the bottom so the pasta doesn't stick. Now layer, half the penne, half the cottage cheese, half the sauce, and then half the shredded mozzarella cheese. Repeat again in the same order.

  • Done! Time to eat up and enjoy.
