Butterless cookies – how and why?!
I wanted to make cookies and I had no butter…augh. What to do – I had a lot of canola oil. Sure – let us try it.
Turned out super well. In fact, I got a lot of “wow…these are good” at work when I brought in the extras. Try them!

Ingredients

  • 1 cup of flour
  • 1/2 cup of cake flour
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of cocoa powder for colour
  • 1/2 cup of sugar
  • 1/4 cup of brown sugar
  • 1/2 cup canola oil
  • 1 large egg
  • 1 teaspoon agave syrup
  • 1 cup cinnamon chips or butterscotch chips, or skor bits

Instructions

  • First - mix the sugars, oil, egg and the agave syrup together.
  • Next - mix the first 5 ingredients together in a bowl (all the dry ingredients).
  • Slowly add in the dry to the wet ingredients. Mix well.
  • Then, add in your one cup of chips or bits. Stir well.
  • Bake at 350 degrees for 9-11 minutes.
  • Let them cool, then stack them up! Or eat, which ever you prefer.
