Apple Butter

Fall is here! Oh, and so is thanksgiving – happy thanksgiving to all my Canadian fans!
When October hits I know it’s time to pluck the apples from our tree. Last year we pruned it, so it didn’t produce any apples. This year, however, the apples were plentiful. Time for apple butter.
Here we go…apple butter in the slow cooker. Much like the strawberry-ruhbarb butter I made last month, this one has little sugar and keeps for about 4-5 weeks in the fridge.

Ingredients

  • 5 pounds of apples
  • 1/4 cup of brown sugar
  • 1-2 teaspoons of cinnamon
  • 1/4 teaspoon of all spice
  • 2 tablespoons of water

Instructions

  • First - wash and cut your apples. Also, be sure to cut the core out!
  • Next - mix the sugar and spices together in a separate bowl.
  • Put the water in the bottom of the crockpot, throw in the apples, and top with the spice/sugar mixture. Set on high for 4 hours.
  • Stir the apple mixture every 30-40 minutes. You don't want the bottom to burn.
  • You'll notice around hour 3 that you start to have what looks like apple sauce. If you like, you can stop there...and you'll have some delicious apple sauce. In our case, though, we'll keep going!
  • Time to blend! Spoon out all the apple mixture into your Vitamix. It should all fit - mine did. Now, blend for about 3 minutes until it's all nice and smooth.
  • Almost done. Put back in the crockpot (after you've cleaned it) and put on low for another 1.5 hours. It'll thicken up well. Done!
