Ingredients

  • 3-4 beets
  • 1 radicchio
  • 2 red peppers
  • 10 radishes
  • 1 stalk of green onions
  • your favourite vinaigrette I used garlic

Instructions

  • First - peel the beets and roast them for about 1 hour or until cooked but still a bit firm.
  • Cut into matchstick pieces.
  • Second, wash and cut the radicchio, slice the red peppers, radishes, and green onions. When you're slicing the radishes, I suggest using a peeler or the straight edge on your grater - simply using a knife won't get the radishes as fine as they should be - just a tip.
  • Put everything in a bowl, add salt and pepper and toss in your favourite vinaigrette.
