Chickpea Salad
A quick summer salad. Chickpeas, tomatoes and cucumbers. Delish!

- 1 can of chickpeas
- 2 tomatoes
- 1 cucumber
- 1/3 cup of olive/grape seed oil - you can use just evoo if you like.
- 3 tablespoons of balsamic vinegar
- 1 teaspoon of oregano
- 1/2 teaspoon of garlic salt
- dash of salt
Mix all the dressing ingredients together, all but the first three ingredients. Whisk well.
Cut your cucumbers and tomatoes - add the chickpeas and mix with the vinaigrette.
It's good - the chickpeas add some saltiness, just like feta cheese would to a Greek salad. Add red onion if you like, too. It's a simple, yet bright and colourful salad.
