Start off by sweating the onions in the oil - with the garlic.
Keep the burner on low and let them cook for about 8 minutes.
While the onions are cooking, tear and wash kale - set aside.
Put the last 5 ingredients together in a bowl - set aside.
Steam the kale - the easiest way to do this is to put it in a microwaveable safe bowl and put it in the microwave for about 4 minutes (until it's soft and wimpy).
Once the onions are brownish add in the liquid (bottom 5 ingredients that you set aside) and let it boil for about 5 minutes.
Add the kale - and let it simmer for about 20 minutes.
After the kale is nice and soft and the cranberries and almonds for the last 4 minutes of cooking.
Add a bit of salt and pepper to taste and enjoy!!
