Southern Sautéed Kale

Kale – southern sautéed and delicious! The health benefits of kale – high in vitamins and antioxidants.  A great side dish for any warm winter meal.

Ingredients

  • 1 bunch of kale
  • 1/2 cup almond slivers and dried cranberries
  • white onion
  • 1 tablespoon of minced garlic
  • 3 tablespoons of olive oil
  • 1 1/2 cup of chicken stock
  • 2 tablespoons of dijon mustard and rice vinegar
  • 5 tablespoons of white sugar

Instructions

  • Start off  by sweating the onions in the oil - with the garlic.
  • Keep the burner on low and let them cook for about 8 minutes.
  • While the onions are cooking, tear and wash kale - set aside.
  • Put the last 5 ingredients together in a bowl - set aside.
  • Steam the kale - the easiest way to do this is to put it in a microwaveable safe bowl and put it in the microwave for about 4 minutes (until it's soft and wimpy).
  • Once the onions are brownish add in the liquid (bottom 5 ingredients that you set aside) and let it boil for about 5 minutes.
  • Add the kale - and let it simmer for about 20 minutes.
  • After the kale is nice and soft and the cranberries and almonds for the last 4 minutes of cooking.
  • Add a bit of salt and pepper to taste and enjoy!!
