Homemade Chicken Enchiladas – with homemade chicken enchilada sauce. They’re fresh, healthy and oh, so good…you need to try these!

Ingredients

  • 1 pack of corn tortillas
  • 9 oz can of whole corn
  • 4 cooked and shredded chicken breasts
  • homemade chicken enchilada sauce
  • 1 cup of old shredded cheddar and jalapeño havarti cheese
  • cilantro

Instructions

  • Gather all of your ingredients and set the oven to 350.
  • Roll 6-8 tortillas stuffed with corn and chicken - lay evenly in a 13x9 pan.
  • Pour the chicken enchilada sauce over the tortillas.
  • Smother with both cheeses and bake at 350 (un covered) for about 40 minutes - sprinkle with cilantro when done baking.
  • Serve with my <a href="https://3ten.ca/recipe-holy-guacamole/" target="_blank">homemade guacamole</a> - eat it up and enjoy.
