Quick Asian/Mexican Salad
This salad is so quick and so good. Lazy because I use bottled dressing, but I do have a recipe for a delicious Asian sesame dressing – I’ll add it to the site soon.

- 1 bunch of spinach
- 9 oz can of whole corn
- 14 oz can of black beans
- 1/2 red onion finely chopped
- 1 bag of coleslaw
- 1/2 cup of sliced almonds
- Asian sesame dressing
Gather all of your ingredients.
Then, add all ingredients together - don't forget to rinse off the beans!
I like to add the dressing about 20 minutes before we eat...the spinach and the cabbage hold it, it doesn't wilt after 20 or so. If you dress it last minute the salad seems stiff. Enjoy!!
