Ingredients

  • 1 cup of white sugar
  • 1 stick of salted butter
  • 1 egg
  • 1/2 tablespoon of vanilla
  • 3 large black bananas
  • 1 teaspoon of baking soda
  • 2 cups of gluten free flour with xanthium gum
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of cinnamon
  • 1 cup chocolate chips

Instructions

  • First, set the oven to 350 degrees. 
  • Then, in a bowl, mash the blacked bananas (the blacker, the better) and mix in the baking soda. Let it sit for a few moments.
  • Now, in your mixer, beat the butter and sugar. Add in the egg and vanilla. Then, add in the mashed bananas.
  • Sift the flour, salt, and cinnamon together and add to the batter. Mix gently until combined. Fold in the chocolate chips.
  • Spoon out drops onto a silicone line baking sheet and bake for about 13 minutes – until lightly golden brown. Cool on wire racks.
