Chow Mein

Chow Mein! What? I know - Bryce loves noodles and one night we didn't have much in the house for groceries. So, I decided search for a quick noodle dish.

Ingredients

  • 1 large white onion
  • 2 jalapeños
  • 1 teaspoon of chopped garlic
  • 3 tablespoons of canola oil
  • 1 package of rice noodles
  • 1 can of mini corn
  • 4 cups of bean spouts
  • 4 tablespoons of soy sauce gluten free
  • 3 green onions
  • salt to taste

Instructions

  • First, get a large pot of boiling water going and cook the rice noodles according to the package for a stir-fry.
  • In a wok heat up the canola oil and toss in the sliced onion and jalapeños, along with the chopped garlic. Cook on medium-high for about 3 minutes and be sure you’re moving the ingredients around.
  • Add the cooked noodles and the mini corn and toss for another 3 minutes.
  • Lastly, add in the bean sprout, the soy sauce and the salt and fry for about 1 more minute.
  • Dish out and top with chopped green onions – eat up and enjoy!
