Ingredients

  • 5 cups of salad mix
  • 8 strawberries
  • 1/4 of a red onion
  • 1 avocado
  • 1/4 cup of slivered almonds
  • 1/2 cup of crumbled feta
  • poppyseed or balsamic dressing

Instructions

  • First, get out a cast iron pan and put it on medium heat. Add in the slivered almonds and toast them. Be sure you’re keeping an eye on the almonds since they’re burn if left unattended for two long.
  • Once that’s done, get out your spring mix (I used a combination of butter lettuce and a trio lettuce) and wash then dry it well. Tear into bite sized pieces if needed.
  • Once the almonds are done, plate up the lettuce and then prep the ingredients. Slice the strawberries, onion, and avocado, then crumble the feta. Layer everything neatly on a flat serving dish and top with the toasted almonds.
  • Lastly, drizzle your favourite dressing, I suggest either poppyseed or balsamic. Doesn’t the salad look nice and bright? So good - eat up.
