Cilantro Lime Chicken

Cilantro lime chicken – in the crock pot. No need to thaw out this freezer meal, just put it right in the slow cooker and you’ll be all set for tacos or burrito bowls. Let’s get cooking.

Ingredients

  • 2 chicken breasts
  • can of black beans 19oz
  • 2 cans of corn 12oz
  • a bunch of cilantro
  • large red onion
  • 1 tablespoon of garlic
  • heaping tablespoon of sriracha
  • 2 tablespoons of lime juice
  • 1 tablespoon of cumin
  • salt to taste

Instructions

  • First, get out a large freezer bag. Cut the red onion and chop up the cilantro. Add to the bag.
  • Open the cans of corn and black beans - drain and rinse then add to the bag.
  • Then, add in the garlic, sriracha, lime juice, and seasonings.
  • Lastly, add in the chicken. You don't need to cut it up, yet you can to make it fit in the bag.
  • When you're ready to cook, add the frozen ingredients to the slow cooker and cook on low for 8 hours.
  • With about 30 minutes left, pull the chicken and get your taco toppings ready.
  • Heat up the taco shells or cook some rice. Then, shred some cheese and get out the sour cream and salsa. Dress up those cilantro lime chicken tacos and the eat up.
