- 1/3 a cup of olive oil and white vinegar
- 1 teaspoon of chili powder and cumin
- 1/2 a lime juiced
- 1 teaspoon of salt - to taste
- 5 roma tomatoes
- 15 oz can of black eyed peas
- 11 oz can of corn
- 15 oz can of black beans
- large red onion
- red pepper
- 2 jalapenos
- 1 cup of cilantro
First up, wash your vegetables and rinse the beans.
Spoon out the inside of the tomatoes and dice. Also dice the onion, peppers, and cilantro.
Mix everything together - stir it really, really well and let it sit for at least 30 minutes.
Chill and eat with chips, on nachos or even with eggs. So much flavour.
