Ingredients

  • 1/3 a cup of olive oil and white vinegar
  • 1 teaspoon of chili powder and cumin
  • 1/2 a lime juiced
  • 1 teaspoon of salt - to taste
  • 5 roma tomatoes
  • 15 oz can of black eyed peas
  • 11 oz can of corn
  • 15 oz can of black beans
  • large red onion
  • red pepper
  • 2 jalapenos
  • 1 cup of cilantro

Instructions

  • First up, wash your vegetables and rinse the beans.
  • Spoon out the inside of the tomatoes and dice. Also dice the onion, peppers, and cilantro.
  • Mix everything together - stir it really, really well and let it sit for at least 30 minutes.
  • Chill and eat with chips, on nachos or even with eggs. So much flavour.
