First, you'll need to start out with cold leftover mashed potatoes.
Then, shredded the cheese and slice the green onions.
Mix the cheese and the potatoes together then work them into little cakes. Use the palm of your hand and your thumb to shape them.
In a large pan melt the butter. Then, drop in the potato pancakes.
Cook about 3-4 minutes per side. Be sure you don't over cook them - you don't want them to totally melt, but rather get a crispy edge and be warm in the middle.
Once they're done top with the fresh green onions and eat. They look so cheesy and good.
