Mashed Potato Pancakes

Mashed potato pancakes. I love mashed potatoes – they are one of my favourite foods so I was in potato heaven when I was about 13 and my dad served us mashed potato pancakes on a Saturday morning with Nana’s leftovers. So good. Simply perfection. I made them for the first time a few years ago for Bryce and he loved them, too. So, here I am sharing my easy and simple recipe with you. Let’s get cooking.

Ingredients

  • leftover mashed potatoes - about 3 cups
  • 1 cup of shredded old cheddar cheese
  • 2 tablespoons of butter
  • 1/4 cup of sliced green onions

Instructions

  • First, you'll need to start out with cold leftover mashed potatoes.
  • Then, shredded the cheese and slice the green onions.
  • Mix the cheese and the potatoes together then work them into little cakes. Use the palm of your hand and your thumb to shape them.
  • In a large pan melt the butter. Then, drop in the potato pancakes.
  • Cook about 3-4 minutes per side. Be sure you don't over cook them - you don't want them to totally melt, but rather get a crispy edge and be warm in the middle.
  • Once they're done top with the fresh green onions and eat. They look so cheesy and good.
