Gluten Free Mexican Pizza

Mexican pizza! What? Yes – this gluten free Mexican pizza is so good you need to try it. I use the same crust I used in my standard gluten free pizza recipe then add the fresh and flavourful ingredients. Let’s get cooking!

Ingredients

  • prepared pizza crust
  • 250 g of pizza mozzarella
  • dash of olive oil
  • 1 teaspoon of chili powder
  • can of corn
  • 1 ripe avocado
  • can of black beans
  • 2 teaspoons of cumin
  • 1 teaspoon of paprika
  • 2 tablespoons of fresh cilantro
  • 1/2 a cup of water
  • splash of lime juice

Instructions

  • Set the oven to 410 degrees on bake and put the prepared pizza crust in for 7-9 minutes.
  • Now, let's prepare the sauce - this is going to be a black bean sauce that's rich in flavour. Get out your food processor and rise the can of black beans.
  • In the food processor mix the black beans, cumin, paprika, cilantro and water. Mix for about 2 minutes then add in your splash of lime juice. Pulse a few times.
  • Once the sauce is done, time to roast the corn. In a pan with a dash of oil roast the corn and chili powder. Heat through. Once the pizza is done it's first round of cooking, it's time to build the pizza.
  • Spoon out the bean sauce onto the crust.
  • Top with the roasted corn.
  • Finish with cheese and bake for another 12-15 minutes.
  • Top with fresh avocado and you're done!
  • Time to eat - doesn't it look so good? Cut a slice and eat up.
