Ingredients

  • large spaghetti squash
  • a bit of grape seed oil
  • 1 tablespoon of minced garlic
  • small white onion
  • 2 tablespoons of quality Italian seasoning
  • can of crushed tomatoes
  • 1 pound of ground turkey
  • 120 g of old white cheddar cheese

Instructions

  • Set the oven to 350 degrees on bake.
  • Okay - first, get out your squash. Wash the outside of the squash and then cut in half long ways. Scoop out all the seeds and rinse. Place cut side down, so flesh side up, on a pan and bake until tender, about 30-40 minutes.
  • While the squash is cooking, time to get your meat sauce ready. In a large skillet heat up a bit of grape seed oil. Add in the garlic and the finely diced white onion. Let them cook until soft - about 4 minutes. Add in the crushed tomatoes and Italian seasoning and bring to a boil. Then, add in the ground meat. Be sure to break up the meat before it cooks into clumps. Reduce to a simmer.
  • Grate the cheese while the squash is finishing.
  • Once the squash is done, take it out of the oven and stuff with 1/4 of the sauce.
  • Top with 1/2 the cheese and put it back in the oven on broil for about 2-3 minutes until the cheese is melted. Done - time to eat up.
