First, gather all of your ingredients.
Lay out 3 bowls. In one, the flour and 1/2 the red chili powder. The next bowl, the raw egg whisked with the franks. Lastly, the third bowl gets the rice breadcrumbs and the rest of the chili powder.
In a large pan, pour in the canola oil and start to heat on low.
Cut each chicken breast into 3 or 4 (that's what Wendy's does, right?). Haha...I'm so funny.
Line your bowls up - flour, then egg and lastly rice breadcrumbs.
Take each piece of chicken and lightly cover in flour then dip in the egg. Step three, cover with rice breadcrumbs
Now, 3 pieces at a time - you don't want to crowd the pan - lay in the chicken into the hot oil. Cook for about 3-4 minutes per side, yet turn every minute to prevent burning.
Let them cool on some paper towel for about 1 minute
Get your buns ready (gluten free, of course).
Load with mayo and lettuce. Oh, and eat with steak fries! Done. Time to eat.
