Huevos Rancheros

Huevos rancheros is the perfect hearty breakfast. The name huevos rancheros comes from the hearty breakfast eaten on rural Mexican farms and we had it on Tuesday morning for breakfast as part of our 3 day 5 year anniversary menu plan – so good. This dish takes a bit of prep work, but it’s worth it. Let’s get started.

Ingredients

  • 4 corn tortillas
  • 1/2 cup of shredded cheese
  • 1 cup of refried black beans
  • 2 tablespoons of olive oil
  • 4 large eggs
  • 1/4 cup of fresh salsa
  • 2 tablespoons of Mexican crema
  • 1/2 a ripe avocado
  • 1/4 cup of cilantro

Instructions

  • First, gather all of your ingredients and set the oven to broil.
  • Lay out the corn tortillas and lightly brush them with oil. Broil for 30-60 seconds. Then, turn over and top with the beans and cheese. Broil for 2-3 minutes until the cheese melts.
  • In a large pan, cook the eggs. For the huevos rancheros I overcooked the eggs just a bit - they should be sunny side up, or still runny.
  • Once the eggs are cooked, top off the tortilla with an egg and finish with salsa, crema, avocado and cilantro. Then, eat.
