Gluten free banana bread with just shy of rotten bananas – it’s the best kind of banana bread. The bananas for this recipe are black. I’m talking, rotting, soggy and mushy black. Don’t use the bananas that are black flecked and staring to turn; no, use the ones that were rotten yesterday.

Ingredients

  • 1 stick of butter
  • 1/2 cup of white sugar and brown sugar
  • 2 eggs
  • 1 tablespoon of vanilla
  • 3 rotten bananas
  • 2 cups of gluten free flour
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3/4 cup of chopped walnuts

Instructions

  • First, gather all of the ingredients and measure everything out. Set the oven to 350 degrees and get our your baking pan.
  • Next, cream the butter and the sugars.
  • Add in the eggs and vanilla. Mix well. Then, peal the bananas and add them. Again, mix them well. Then sift in the dry ingredients and combine. While it's mixing, butter your 8x8 baking pan.
  • Set the gluten free banana bread in the 350 degree oven and bake for 40-50 minutes.
  • Take out and cool for 5 and then cut and eat. It's great on it's own or with a bit of butter.
