Black Bean Burger Bombs

Black bean burger bombs are a take on my black bean burgers. This time, however, we stuff them into onions and cook them over the campfire! They’re going to be super good and full of flavour. I made them ahead of time then put them in the freezer – that way, they help keep the other foods in the cooler cold. Then, in the evening, after we’ve set up our campsite, just in time for dinner, they’ll be unthawed a bit and ready for the fire. Time to get cooking!

Ingredients

  • 2 cups of black beans
  • 3/4 cup of cooked brown rice
  • 1/4 cup diced red pepper
  • 3/4 cup of diced red onion
  • 2 cloves of garlic chopped
  • 1 teaspoon of cumin and chili powder
  • 3/4 cup of corn
  • 2-3 tablespoons of olive oil
  • 1/4 cup of cilantro
  • 2 whole white onions

Instructions

  • First, gather all of your ingredients.
  • Next, add the 1/2 the oil into a warm pan. Heat the oil and then add in the onion, peppers, garlic, cumin, and chili powder. Cook for about 2 minutes - and keep stirring.
  • Then, add the rice and the beans. Cook for 5 more minutes.
  • While the beans are cooking, cut open the onions. I found it best to run them under water so they separate easier.
  • Move the cooked beans to a bowl. Let cool for about 4 minutes.
  • Time to add in the corn and cilantro. Mash.
  • Now, stuff the onion with the black bean burger mix.
  • Wrap in foil and cook for about 15-20 minutes in the campfire. Eat and enjoy
