First, gather all of your ingredients.
Next, add the 1/2 the oil into a warm pan. Heat the oil and then add in the onion, peppers, garlic, cumin, and chili powder. Cook for about 2 minutes - and keep stirring.
Then, add the rice and the beans. Cook for 5 more minutes.
While the beans are cooking, cut open the onions. I found it best to run them under water so they separate easier.
Move the cooked beans to a bowl. Let cool for about 4 minutes.
Time to add in the corn and cilantro. Mash.
Now, stuff the onion with the black bean burger mix.
Wrap in foil and cook for about 15-20 minutes in the campfire. Eat and enjoy
