Fresh Zucchini Boats

Fresh zucchini boats – the perfect dinner on this beautifully sunny spring day. Not only are they fresh (well, by fresh I mean not all hot and filled with melted cheese), but they are tasty, too. In this recipe I cook the zucchini first and then add the other ingredients – I don’t bake them all together. Let’s get cooking.

Ingredients

  • 1 zucchini
  • cup of corn
  • 2 cups of black beans I soak my own, better than using a can
  • 3 tablespoons of fresh cilantro
  • 1/4 cup of shredded cheddar cheese
  • 1 teaspoon of ground chili spice
  • about 1 tablespoon of olive oil

Instructions

  • First, gather all of your ingredients - the fresher, the better! Set the oven 350 degrees on roast.
  • Time to prep the zucchini. Cut the ends off and then cut the zucchini lengthwise in half and then horizontally in half, so you've got 4 pieces. Lay them skin side up on a baking sheet and drizzle with 1/2 the olive oil. Roast in the oven for 12-17 minutes, until the centre is cooked.
  • While the boats are roasting, cook the corn and the black in a pan with 1/2 the oil and all the spice - you want it to roast and blacken just a bit. Take off the heat and set aside.
  • When the zucchini is done, cut out the middle and then fill up!
  • Load up with the corn and black bean mixture and then top with cheese and cilantro. Done - time to eat.
