Chocolate Cake Cookies

Chocolate cake cookies – they are so cake like and made from scratch – not a box. Fluffy and moist (I know, a lot of people hate that word, but they are moist) and the perfect little cookie snack for this wonderful week in March.

Ingredients

  • 3 1/2 cups of cake flour
  • 1 teaspoon of salt
  • 1 tablespoon of baking soda
  • 1 teaspoon of baking powder
  • 1 1/2 cup of coco powder
  • 1 cup of salted butter - room temperature
  • 2 cups of white sugar
  • 3 tablespoons of vanilla
  • 473 ml of buttermilk - room temperature
  • 2 eggs

Instructions

  • First, gather all of your ingredients. The cake flour is essential to make these cake like cookies. If you don't have cake flour, go get some - I'll wait!
  • Set the oven to 400 degrees so it's nice and hot when we're done with the batter.
  • Once you've gathered all of your ingredients, it's time to sift all of the dry ingredients together. Start with the cake flour and sift into a large bowl. Then add the salt, baking soda and the baking powder. Then, finish off with the coco powder. Then, combine all of those ingredients well.
  • In the mixer, cream the butter and sugar together until nice and smooth. Then, add in the eggs. Mix well. Then, add in the buttermilk. Mix well. Then, about 1/2 a cup at a time, mix in the dry ingredients into the wet ingredients. Combine well.
  • Grab a cookie sheet and line it with a silicone mat - the perfect cookie baking tool.
  • Roll the batter into 1 inch balls and place them on the cookie mat.
  • Bake in the oven for 12 minutes and then let them cool on the pan for 10. Then move to a wire rack.
  • They are done. Don't they look so good?! Eat up - they are awesome.
