Skor Butter Cookies

Skor butter cookies are so good. And this recipe makes more than 4 dozen! Total holiday score. I love butter cookies and it’s hard for me not to simply devour them all, although being a recent celiac, it’s a bit easier to stay away now.

Ingredients

  • 2 sticks of salted butter
  • 1 cup of white sugar
  • 2 teaspoons of vanilla
  • 1 egg
  • 2 1/2 cups of cake flour
  • 1 heaping cup of skor bits

Instructions

  • First up, gather all of your ingredients - be sure the butter is a room temperature. You'll want it to mix well with all of the other ingredients.
  • Cream the butter and sugar together well.
  • Next, add in the vanilla and the egg.
  • Then slowly add in the flour 1/2 a cup at a time. Mix well.
  • Once all of the ingredients are combined, stir in the skor bits.
  • Time to roll it up. This time I put the dough into two logs - I learned from the dark chocolate butter cookies.
  • Once they are rolled put in the fridge for 2-3 hours, yet no longer than 3 hours.
  • Set the oven to 375 degrees.
  • Unwrap the logs and cut into 1/4 inch pieces. Lay out on parchment paper or a baking mat and bake for 7-9 minutes. Watch the edges, you don't want them to get too dark.
  • Done. Look at all of those skor bits, so melty and so good.
