First up, gather all of your ingredients.
Time to brown the meat. Keep it moving so it doesn't all stick together - you want it crumbly.
Chop the green onions.
While the meat is browning mix the sour cream, cottage cheese and the chopped green onions together. Stir and add some salt and pepper to taste.
Cook the noodles according to the directions on the package.
Check on the ground beef - once it's nice and brown, add in the tomato sauce.
Once the noodles are cooked and rinsed, add them to the sour cream and cottage cheese mixture. Stir well.
Grab your freezer packs - it's time to layer. First layer noodles, then ground meat, then top with shredded cheese. Each dish should get 2 full sets of layers, so 6 layers in total.
Bake at 350 degrees for 15-20 minutes or freeze and bake at 350 degrees for 30-35 minutes.
