Fresh Fall Salad

The first recipe in the feature of Five Fabulous Fall Recipes is this fresh fall salad. It’s made with arugula, pomegranate, pecans, apples, feta, and the perfect fall dressing. This salad takes a bit of time to complete, mainly because of the pomegranate, yet it’s worth it. Believe me.
Try this sometime this week. It’s fresh and tasty, oh, and totally healthy, too.

Ingredients

  • 6-8 cups of fresh arugula
  • medium green apple
  • an avocado
  • 1/2 a pomegranate
  • 1 cup of feta
  • 1/2 a cup of dried cranberries
  • 3/4 of a cup of pecans
  • Dressing:
  • 1 teaspoon of balsamic vinegar
  • 1/4 of a cup of olive oil
  • 1 teaspoon of agave syrup

Instructions

  • First up, get your pomegranate ready.
  • The easiest way to do this is to fill a large bowl with water and then break up the pomegranate in the water. The seeds (the good stuff) will sink to the bottom while all the rhine will float to the top.
  • You can use a spoon to skim off the top.
  • Cube up the feta, the whole avocado, and about 3/4 of the apple.
  • Mix the dressing - be sure to do this well, so it doesn't separate.
  • Pour the dressing over the arugula and toss.
  • Then, dish out the dressed arugula into each bowl and top with avocado, apple, feta, cranberries, pecans and pomegranate seeds.
  • Time to eat - you can eat before you clean up, I won't tell!
