No Bake Peanut Butter Cookie

No bake peanut butter cookies. These are the absolute best. Really. Protein, sweet, and a tad salty. So good.
Going gluten free has been so good. Not only do I feel great, but I’ve lost a couple of pounds, too. I certainly won’t complain about that. The one thing I miss most is cookies – chewy, gooey cookies. These totally fill that craving and they are healthy, ta-boo!

Ingredients

  • 3 1/2 cup of oat flour
  • 1/2 teaspoon of salt
  • 1/2 cup of honey
  • 1/3 cup of agave syrup
  • 4 tablespoons of almond milk
  • 1/4 cup of white chocolate chips and dried cranberries
  • 1/2 cup of peanut butter

Instructions

  • First - gather all of you ingredients. If you want these to be gluten free, you need to use wheat free oats (odd, how they don't simply say gluten free).
  • Anyway, once you've got all of your ingredients, it's time to get out your food processor.
  • Take your 3 1/2 cup of oats and turn it into flour using your food processor.
  • Next up, combine the peanut butter, agave, and the honey - melt in the microwave slowly. Stir often.
  • Then, stir in the salt, milk, and oat flour. Mix well.
  • Gently add in the dried cranberries and white chocolate chips.
  • From into cookie shapes - press with a fork and let them set in the fridge for about 15 minutes.
  • That's it - time to eat!
