Monster Cookies

Monster cookies. Yes. 100% goodness. I made a pan of these just before Christmas last year – yet I made a gluten free version. Gluten free monster cookies – they are good, yet these ones are a bit better. Mainly because they are in cookie for and not bar form.

Ingredients

  • 2 sticks of butter
  • 1 cup + 1 tablespoon of brown sugar
  • 1/2 cup of white sugar
  • 1 1/2 cup of smooth peanut butter
  • 2 large eggs
  • 1 tablespoon of vanilla
  • 2 1/2 cups of flour
  • 1 teaspoon of baking soda
  • heaping cup of oats
  • 1 1/2 cup of mini m&ms
  • 1/2 cup of chocolate chips and peanut butter chips

Instructions

  • First, gather all of your ingredients and ensure that everything is correctly measured. This seems like a bit of a hassle at first, yet it makes baking any recipe that much easier.
  • Set the oven to 350 degrees.
  • Cream the butter and the sugars...don't eat any! haha
  • Next, add in the peanut butter, eggs, and the vanilla. Mix well.
  • Slowly add the flour and baking soda. Just add a bit at a time and make sure it's all well combined.
  • Stir in the oats, 1 cup of the m&ms, and the chocolate and peanut butter chips. Save the other bit of mini m&ms for the top of the cookies.
  • Once the batter is well mixed, roll out into crab cake like shapes. You want them thick so they stay soft.
  • Bake for 9-11 minutes. Don't over bake. You want them soft.
  • Let them cool for 10-15 minutes and then eat them up!
