Stuffed Sweet Potato

Stuffed sweet potato. Not only is this recipe good, it’s easy. We quite often have beans and corn in our fridge, so this recipe doesn’t even require a special trip to the grocery store. Total bonus. Oh – it’s meatless Monday and this recipe fits! Again, bonus.
It’s good for lunch or dinner if you pair it with a salad. Sweet potatoes are so good for you – you should try them.

Ingredients

  • 1 large cooked sweet potato
  • 1/2 cup of black and white beans
  • 1 cup of corn
  • 3 tablespoons of cilantro
  • 4 tablespoons of green onion
  • 2 oz of cream cheese and salsa

Instructions

  • Cook your sweet potato - the quickest way is in the microwave, yet I prefer the oven
  • Chop the green onions
  • Mix the corn, black beans, white beans, and green onions together in a bowl - set aside
  • Cut the cooked sweet potato in half lengthwise
  • Mash the centre of the sweet potato
  • Mix the cream cheese and salsa together in a bowl and microwave for 1 minute until the cream cheese is soft - stir and mix
  • Pour half of the cream cheese salsa mix on each half of the sweet potato
  • Top with half the corn and bean mix
  • Finish with cilantro
