It’s fall – and what better way to celebrate October than with pumpkin spice cookies!
These cookies are healthy and pack a lot of flavour. Try them today (or tomorrow).

Ingredients

  • 1 cup of flour and cake flour
  • 1 teaspoon of baking soda and ground cinnamon
  • 1/2 teaspoon of nutmeg all spice and salt
  • 6 tablespoons of salted butter
  • 1/4 cup of sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups of pure pumpkin puree
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 1/3 cups of oats
  • 1/2 cup of walnut pieces and cranberries

Instructions

  • First - gather all of your ingredients.
  • Mix the first 6 together and set aside.
  • In your mixer, cream the butter and the sugars.
  • Then, add in the pumpkin, egg and the vanilla. Blend well.
  • Add in the dry ingredients, slowly.
  • Then, gently stir in the oats, walnut pieces and cranberries.
  • Form into clusters and bake at 350 degrees for about 15 minutes.
  • Let them cool, then eat!
