Mexican One Dish Casserole

In a rush? Need to just throw something in the oven? I felt like my Mexican Lasagna yet I didn’t have time to make it…this recipe has the same flavours without all the work. Time for Mexican one dish casserole.
The prep for this recipe took me 6 minutes – then the oven did the rest of the work. Try it next time you’re in a time crunch.

Ingredients

  • 5 chicken breasts
  • 1 cup of raw quinoa
  • 1 cup of vegetable broth
  • 2 cans of corn
  • 1 can of black beans
  • 1 cup of salsa
  • 1/2 a red onion
  • 1 red pepper
  • 3 green onions
  • 1 jalapeño
  • a handful of cilantro
  • 1 1/2 cups of shredded cheese
  • 1 tablespoon of chili powder and cumin

Instructions

  • First - gather all of your ingredients.
  • Next - chop the red onion, red pepper, jalapeño and the cilantro.
  • Then, mix in the quinoa, vegetable broth, corn, black beans, salsa, chili powder and cumin - put it all in a 9x13 dish.
  • Cut the chicken and push it into the casserole, covering it fully.
  • Top with the shredded cheese. Save the green onions to top it at the end.
  • Bake for 45-55 minutes or until the chicken is done.
  • Top with green onions and eat with <a href="https://3ten.ca/recipe-holy-guacamole/" target="_blank" rel="noopener">holy guacamole</a>. So good - and a quick and easy way to eat well and still get all of that laundry done.
