Quinoa Asian Salad

This salad packs some heat and is delicious – especially around lunch time when you’re at work. So good. Try this quinoa asian salad – and cook your quinoa in a rice cooker – it’s super easy.
Make sure you have all of the ingredients on hand, or pick them up next time you head to the grocery store, that way you can make this salad any time you please! It’s also a great addition to any back yard BBQ or summer potluck party. Eat up.

Ingredients

  • 2 cup quinoa
  • 4 cups water to make the quinoa
  • 1/4 tsp salt
  • 3 cups of coleslaw I just grab a bag - no dressing
  • 1 yellow and orange pepper chopped
  • half a red onion chopped
  • 1/2 cup shredded carrots
  • handful of cilantro chopped
  • 8 green onions chopped
  • Dressing
  • 1/2 cup of soy sauce
  • 2 tablespoons of sesame oil
  • 2 tablespoons of rice wine vinegar
  • 4 tablespoon sesame seeds
  • 1/2 tablespoon of red pepper flakes

Instructions

  • First - gather all of your ingredients together.
  • Then, chop the peppers and onions and set aside.
  • Shred the carrots and chop the cilantro and set aside, too.
  • Mix all of the dressing ingredients together.
  • Once the quinoa is cooked and cooled, mix all of the salad ingredients together.
  • Pour the dressing on and mix well. Then...you're done! Eat up - it's so good - full of flavour.
