Apple and Carrot Salad

When I was at the grocery store last week we picked up about 5 gala apples and a 2 pound bag of carrots – the intent was to use them in juices. That didn’t happen. Instead of letting them go bad, I checked out the pantry and found cranberries and pecans – perfect. Apple and carrot salad it is!

Ingredients

  • 4 gala apples
  • about 1.5 pounds of carrots
  • 1 1/2 cups of dried cranberries
  • 1 cup of chopped pecans
  • Dressing
  • 1 cup of mayo
  • 1/4 cup of sugar
  • 1/8 cup of apple cider vinegar

Instructions

  • First - get your ingredients ready.
  • Slice the apples into match stick pieces and put in a bowl - set aside.
  • Grate the carrots - add to the bowl of apples.
  • Add in the dried cranberries and pecan pieces - stir well.
  • Get the dressing ready.
  • Mix the 3 ingredients together well and then add to the salad. Done!
