Southwestern Salad

Southwestern salad time! This is one of my favourite salads to make. It’s full of colour (and you should always eat a rainbow!), it’s hearty, and it tastes delightful.

Ingredients

  • 2 avocados
  • 1 orange pepper
  • 2 cups of corn
  • 2.5 cups of black beans
  • 2 roma tomatoes
  • 3 cups of leaf lettuce

Instructions

  • First - wash and chop the lettuce into small pieces.
  • Next, de-seed the tomatoes (use a spoon to clean out the juicy part) and dice.
  • Cut the orange pepper and the avocados into bite size pieces. Pretty, eh. All the colours.
  • Mix all the ingredients together in a large bowl, add in the <a href="https://3ten.ca/recipe-cilantro-sriracha-dressing/" target="_blank" rel="noopener">cilantro-sriracha dressing</a>, or your favourite dressing, and eat up. Serve with chicken, steak, or a bit of shredded cheese on top.
