Southwestern Salad
Southwestern salad time! This is one of my favourite salads to make. It’s full of colour (and you should always eat a rainbow!), it’s hearty, and it tastes delightful.

- 2 avocados
- 1 orange pepper
- 2 cups of corn
- 2.5 cups of black beans
- 2 roma tomatoes
- 3 cups of leaf lettuce
First - wash and chop the lettuce into small pieces.
Next, de-seed the tomatoes (use a spoon to clean out the juicy part) and dice.
Cut the orange pepper and the avocados into bite size pieces. Pretty, eh. All the colours.
Mix all the ingredients together in a large bowl, add in the <a href="https://3ten.ca/recipe-cilantro-sriracha-dressing/" target="_blank" rel="noopener">cilantro-sriracha dressing</a>, or your favourite dressing, and eat up. Serve with chicken, steak, or a bit of shredded cheese on top.
