Broccoli Salad

Salad time! Broccoli salad is a great salad when you have to bring something to a potluck or when you need to make the salad ahead of time. Why? The broccoli doesn’t wilt like regular salad. Plus, it’s hearty and colourful.

Ingredients

  • 2 bunches of broccoli
  • 1 carrot
  • 1/4 cup of red cabbage and red onion
  • 1/2 dried cranberries and pecan pieces
  • 1 pack of turkey bacon
  • 2 cups of mayo
  • 1/2 cup of sugar
  • 1/4 cup of apple cider vinegar

Instructions

  • First - dice up the turkey bacon and get it cooking.
  • Second - dice the red onion.
  • Next, cut the head of broccoli into pieces and cut the stems of the broccoli and the carrot into match stick pieces.
  • Slice up the red cabbage. If you're in a rush, you can use President's Choice Broccoli Pieces (2 bags) and Broccoli Slaw (1 bag). If you use the bags, you don't need the carrot and cabbage.
  • For the dressing...mix the mayo, sugar, and the apple cider vinegar together really well. Add in some salt and pepper to taste.
  • Mix the broccoli, cabbage, carrot, and onion together.
  • Add 1/2 the dressing and stir.
  • Mix in the cranberries and pecan pieces.
  • Add in the rest of the dressing.
  • Now, mix in the cooled, fully cooked, turkey bacon.
  • Put in a pretty bowl and serve up, or put it in the fridge while you get ready for your potluck.
