Like cranberries? Like pecans? These pecan cranberry cookies are perfect for you. Celebrating day 6 of the 12 days of cookies – 1/2 way there! These cookies are a great little afternoon snack with tea or coffee, or just on their own.

Ingredients

  • 1 cup of soft salted butter
  • 1/2 cup of sugar
  • 3 tablespoons of milk
  • 1 tablespoon of vanilla
  • 1/2 teaspoon of salt
  • 2 1/2 cups of flour
  • 1/2 cup of chopped pecans
  • 3/4 cup chopped dried cranberries
  • a bit of extra sugar optional

Instructions

  • First - cream together the butter and sugar.
  • Mix in the milk, vanilla, and salt.
  • Slowly add in the flour.
  • Stir in the pecans and the cranberries.
  • Lay the dough on some plastic wrap and shape into a log. Wrap the log up and put in the fridge for about 3 hours.
  • Unwrap the plastic wrap and slice the cookies.
  • Then roll the edges of the cookies in the extra sugar before baking.
  • Bake at 375 degrees for about 12 minutes. Don't over bake - once the bottom edge starts to brown in the slightest they are done.
