Chickpea Salad

A quick summer salad. Chickpeas, tomatoes and cucumbers. Delish!

Ingredients

  • 1 can of chickpeas
  • 2 tomatoes
  • 1 cucumber
  • 1/3 cup of olive/grape seed oil - you can use just evoo if you like.
  • 3 tablespoons of balsamic vinegar
  • 1 teaspoon of oregano
  • 1/2 teaspoon of garlic salt
  • dash of salt

Instructions

  • Mix all the dressing ingredients together, all but the first three ingredients. Whisk well.
  • Cut your cucumbers and tomatoes - add the chickpeas and mix with the vinaigrette.
  • It's good - the chickpeas add some saltiness, just like feta cheese would to a Greek salad. Add red onion if you like, too. It's a simple, yet bright and colourful salad.
  • Eat up and enjoy!
