First - cook your noodles.
Second - sauté the spinach in the garlic and olive oil. Get out your sauce - I made mine the day before, turkey rose sauce...so good!
Set noodles aside when they are done - they need to cool.
Once the spinach is wilting add it to the ricotta cheese and add salt and pepper to taste.
Lay out your noodles. I always make a couple extra than what I think I'm going to need - this way, I don't get frustrated when some of the noodles break.
Lay down the ricotta and spinach mixture first.
Next - pile on the sauce - leaving a bit to top the rolls off. Gently roll and place seam side down into the baking dish.
Top with about 1/4-1/3 cup of the sauce and all the shredded mozzarella.
Bake in the oven, uncovered, at 350 degrees for about 35-45 minutes. Portion out and enjoy!!
