Spicy Pickle Grilled Cheese

Spicy pickle grilled cheese – so good and just a punch of spice. These sandwiches are made with zesty hot and spicy pickles, old white cheddar and old yellow cheddar cheese. One on gluten free bread for me and another on fluffy white Texas toast for Bryce. Let’s get cooking.

Ingredients

  • 2 slices of bread
  • 1 tablespoon of mayo
  • 1/4 cup of shredded old white and yellow cheddar cheese
  • 2 spicy pickles

Instructions

  • First, make sure you get the right pickles. These ones are zesty and crisp.
  • Next, mayo the outside of the bread and shred the cheese.
  • In a warm pan, lay down the bread and place the pickles down, then top with cheese. Then, once you’ve got the top on, turn up the heat a bit. I put the lid on for a small bit so the cheese melts. Keep an eye on them – you don’t want them to burn.
