Roasted Parmesan Potatoes

Roasted parmesan potatoes – the perfect side dish to match bbq drumsticks. These potatoes are salty, crispy, and full of flavour. Let’s get cooking!

Ingredients

  • 1 bag of baby potatoes
  • 2 tablespoons of grape seed oil
  • 3 tablespoons of chopped garlic
  • 1 tablespoon of Italian seasoning
  • 3/4 cup of fresh parmesan cheese
  • 2 tablespoons of melted salted butter
  • 1/4 cup of green onions
  • salt and pepper to taste

Instructions

  • First step is to set the oven to 400 degrees on roast.
  • Then, parboil the baby potatoes whole. You want them to boil for about 5 minutes.
  • While they’re boiling get out a sheet pan and spray with oil. Shred the parmesan cheese and lay it down on the sheet pan.
  • Once the potatoes are done boiling, cut them in half and put them in a bowl and gently toss with the grape seed oil, garlic, seasoning and salt and pepper.
  • Then, place them cut side down on the sheet pan. Cook for 18 minutes and then use a wooden spatula and scrape up the potatoes.
  • Then, once you’ve got the potatoes lifted, put them back in the oven for another 7 minutes or so.
  • Once they’re done, browned and crispy, top with the melted butter and chopped green onions. Serve and eat up.
