First, make the waffles with all but the last 3 ingredients above. Once you have all of your ingredients, separate the eggs and whip the whites until they are fluffy.
Then, in a separate bowl, sift together the flour, baking powder, soda, salt and sugar. Oh, and turn on your waffle iron – you want it nice and hot. We cook ours on the hottest setting, yet certainly don’t burn your waffles.
In a third bowl mix the yokes, vanilla and the oil together. Then add the milk. Once combined, add to the dry ingredients gently being careful not to over mix. Then, add in the egg whites – fold them in with a rubber spatula.
Once the batter is just combined, and still light and fluffy, spray the waffle iron and add the batter. Cook until crispy on the outside and fluffy on the inside.
Now that your waffles are cooked and ready to go, melt the 1/4 cup of butter and mix the bottom two ingredients, the sugar and cinnamon. Next, butter brush your hot waffles, dunk in the sugar/cinnamon mixture and serve right away!
