Chipotle Grilled Watermelon

Chipotle grilled watermelon. Remember a few posts back when I mentioned I’m excited about BBQing? Well, this takes it to a whole new level. This grilled watermelon is full of flavour and can hold any spice you toss at it. Cumin? Sure! Steak spice? Why not?! Chipotle? Yes – my favourite!! Okay, let’s get cooking.

Ingredients

  • 8 slices of watermelon
  • 2 tablespoons of canola oil
  • 1/2 tablespoon of chipotle chili flakes
  • 1 teaspoon of cumin
  • salt and pepper to taste

Instructions

  • First, heat up the BBQ and ensure it’s nice and hot. Then, cut the watermelon into fast pizza like shapes, about 1 inch thick. Then, on a baking sheet or in a glass pan, drizzle with the oil and flip a few times to ensure they’re nicely coated. Next, sprinkle on the spices for nice even coverage.
  • Time to grill – using tongs, place the 8 watermelon triangles onto the grill and cook for about 3-4 minutes per side – on medium/high. Keep an eye on them, but they’re pretty hard to burn. Once you get some nice lines on them, about about 4 minutes, flip and cook the other side. I let them sit for the full 3-4 minutes per side and they turned out well.
  • Done! Time to eat. Eat up with a side salad, guacamole and chips, or just have them as an afternoon snack!
